List of Ingredients
* 2 oz large, shelled and cleaned shrimp (approximately 4)
* 1 large tomato, diced
* 2 scallions, chopped
* 1 garlic clove, minced
* 1 tbsp chopped parsley
* 2 tsp lemon juice
* 1 tbsp white wine
Recipe
Saute shrimp in nonstick skillet for 1 minute, using a little water or broth if necessary to keep from sticking. Add tomato, scallions, garlic, and parsley. Heat, stirring, another 3 minutes until shrimp turn pink. Add lemon juice and white wine. Bring to a boil, remove from heat and serve. (good over rice)
