Simple Shrimp Scampi

* 1/2 cup cooked rice
* 1/4 cup finely chopped onions
* 2 oz cooked shrimp
* no-salt lemon pepper
* garlic or garlic powder
* lemon juice
Recipe
In a non stick skillet (use a little cooking spray** if you want), saute rice and onions over medium heat until rice starts to brown a bit and onions are translucent.
Add shrimp and season with garlic and lemon pepper to taste. Heat through.
About 2 minutes before serving, turn heat off, squeeze lemon juice over mixture. Stir well and let sit to absorb the juice. Serve.
