Shrimp-Pablano Rice

1 pound shrimp, peeled & deveined
no salt added chicken of veggie broth (for cooking)
Black pepper
1 poblano chile, seeded & chopped
¼ c fresh cilantro
¼ fresh lemon juice
4 lemon wedgesRecipe
In heated skillet (med high) add broth, add chile and cook for 3 min, or until lightly browned, stirring frequently. Reduce heat to med & add shrimp, cook for 4 min or until shrimp are done. Remove from heat. Add lemon juice and cilantro & toss to coat. Serve over rice with lemon wedges for garnish.
