Shrimp Jambalaya

Shrimp Jambalaya:
1) In 4 quart pot over medium high heat, cook turkey sausage until browned. Stir in 1 small chopped onion, 1 diced green pepper, and 2 cloves crushed garlic. Cook, stirring occasionally until tender. Add 2 1/2 c. rice, cook until rice grains are opaque, stirring frequently.
2) Add one can of diced tomatoes (no salt added), one can tomato sauce (no salt added), two cups of water, 1/2 tsp Thyme, 1/4 tsp ground red pepper flakes (or more if you like it spicy), and 3 bay leaves. Over high heat, heat to boiling. Reduce heat to low, cover and cook, stirring occasionally until rice is tender, about 25 minutes (you may need to add more water along the way) discard bay leaves. Add 40 small cooked shrimp (size 51/60), cook for 5 minutes more and enjoy.
Turkey Sausage:
Combine 20oz lean, ground turkey breast with 3 cloves crushed garlic, 1/2 tsp black pepper, 1/4 tsp cayenne pepper, 1/4 tsp mace (optional), 1/4 tsp allspice, 1 tsp thyme, 1/2 tsp paprika, 1/2 tsp fennel and 1/2 tsp sage.
