Slow Cooker Cioppino

2C chopped onion
1C chopped celery
5 cloves garlic, finely chopped
28oz can NSA diced tomatoes
6oz can NSA tomato paste
1C dry white wine
1/2 C water
1T red wine vinegar
2.5 tsp Italian seasoning
1/4 tsp Splenda
1/4 tsp crushed red or cayenne pepper
1 dried bay leaf
1lb firm fleshed white fish, cut into 1in pieces
3/4 lb uncooked, peeled & deveined med. shrimp
1/2 lb bay scallops
1/2 lb crab (you need about 1.5 lbs crab legs to yield 8 oz crab meat)
1/4 C chopped parsley
Recipe
Mix all ingredients except fish, shrimp, scallops, crab and parsley in a 5-6 quart slow cooker. Cover and cook on high setting 3 to 4 hours or until vegetables are tender. Stir in all fishes. Cover and cook on low setting 30 to 45 minutes or until fish flakes easily with fork. Remove bay leaf. Stir in parsley. Yields approx. 8 C and includes approx. 40 oz of fish(es).
Its usually made with clams, but the store didn't have any fresh so I got scallops instead.
