Snow Pea & Shrimp Salad

List of Ingredients
4 cups snow peas, trimmed and strings removed
8 ounces sliced water chestnuts, rinse, drain
3 scallions, sliced
1 red bell pepper, julienned
1 pound shrimp, cooked (small or medium) shelled
1 tablespoon sesame oil
2 tablespoons rice or white wine vinegar
1 tablespoon low sodium soy sauce
3 tablespoons sherry
1 tablespoon finely grated fresh ginger
1 teaspoon fresh lime juice Recipe
Steam the snow peas in a brief binute or two until they turn bright green. Immediately immerse in a bowl of cool water. Drain and pat dry.
Stir together snow peas, water chestnuts, scallions, bell pepper and shrimp. Put the sesame oil, vinegar, soy sauce, sherry and ginger into a small saucepan. Bring to a boil, then remove from the heat and let it come to room temperature. Stir in the lime juice. Pour the dressing over the salad and toss.
