4 sole fillets (3 oz each), or use flounder
1/4 cup white wine
1/4 cup chopped fresh parsley
1 tablespoon fresh squeezed lemon juiceRecipe
Rinse the fish and pat dry with paper towels. Coat both sides with nonstick spray. Warm a large nonstick skillet over medium-high heat. Add the fish and cook for 2 minutes, or until lightly browned on the bottom. Add the wine, parsley, and lemon juice. Reduce the heat to low, cover, and cook for 4 minutes, or until the fish is opaque. (Check by inserting the tip of a sharp knife in the center of 1 fillet). Remove the fish to warm plates. Boil the sauce over medium-high heat for 1 minute to reduce slightly. Pour over the fish.
