1/3 �cup chopped onion
3 �tablespoons diced green chile peppers
1 �tablespoon oil
1 � tomato, chopped
1/4 �cup chopped parsley
1 �tablespoon lime juice
1/4 �teaspoon dried oregano
1/4 �teaspoon sugar
12 �ounces sole filets
1 � green bell pepper, ends removed, seeded and sliced into ringsRecipe
In a skillet, saut� chopped onion and diced green chili peppers in the oil (or use broth or nonstick cooking spray). Add chopped tomato, chopped parsley, lime juice, oregano and sugar.
Place sole filets in a baking dish. Arrange the sliced bell pepper rings on top and cover with the sauce. Bake at 450�F oven until the sole flakes easily when tested with a fork, about 20 to 30 minutes.
