Talapia w/ Asparagus "Almondine"

Tarragon or Red Wine

Splash vineger over fish. Sprinkle on all your spices , cut up your mushrooms and put some over the fish, (save some mushrooms aside) Once again cover the fish with the vinegar, and coat with spices once again, then add the juice from 1/2 a lime juiced or squeezed over everything. Wrap or cover and sit in fridge for 30- 40 min.
Once marinated - lay fish on heated grill add some of the "marinade" on it and close- cook 5 min.. Open and add mushrooms and the rest of the liquid, Squeeze other half of lime over fish. Cook 3 min remove fish and mushrooms from grill. (Can be baked in the Oven instead of the Grill on 350).
Layer the remaining mushrooms in a small dish, cut asparagus (however you prefer) lay on top, Chopped onion on top of that. Add 1 1/2 - 2 tsp. of almond extract to 3oz of water. Cover the bowl and cook ( I have a by the cup vegetable setting ) Let sit a moment and carefully open. Serve with Talapia and a carb of your choice. (Yam with cinnamon and splenda goes wonderfully with this!)
