Venetian Shrimp & Scallops

List of Ingredients
1 lb sea scallops
1/4 cup rice or oat flour
1 Tbsp broth or water for saute
2 cloves garlic, minced
1 large shallot, finely chopped
1/2 tsp red pepper flakes
1 cup white wine
1 cup chicken broth
1 (14 oz) can diced tomatoes in juice
1/4 tsp saffron
1 lb shrimp, peeled
12 leaves basil, torn
1 lemon, zestedRecipe
Lightly coat scallops in flour (discard remaining flour). Brown scallops ~ 2 minutes on each side, then remove from pan. Add garlic, shallots, red pepper flakes. Reduce heat and saute ~ 2 minutes, stirring constantly. Add wine and free up and drippings. Reduce wine ~ 1 minute. Add stock, tomatoes, saffron. When liquids come to a boil, add shrimp and cook ~ 3 minutes. Return scallops to pan and cook 2-3 minutes more.
Top with basil and lemon.
Serve over rice.
