Acorn Squash Soup w/ Spinach

1/4 cup low salt chicken broth
1 medium onion, chopped
1 medium yellow bell pepper, cored and diced
2 cloves garlic, minced
5 cups water
4 cups peeled chopped acorn squash
3/4 cup uncooked white rice
1/2 teaspoon ground white pepper
1 cup chopped spinach leaves Recipe
Heat broth in a large saucepan. Add onion, bell pepper, and garlic, and saute for 5 minutes. Add water, squash, rice and white pepper. Bring to a obil, reduce heat and simmer for 20 minutes. Stir in spinach and continue to simmer for 10 additional minutes.
