    Recipe By: wegman's Menu magazine, winter 2003

    List of Ingredients




    1 medium garlic clove, peeled & chopped
    1 T fresh ginger, peeled & chopped
    3 14.5oz cans of no-sodium-added chicken broth
    1 12oz pkg of asian slaw*
    1/4t dried pepper flakes
    1/2lb boneless, skinless chicken breast, slice cross-grain in 1/4" strips
    2T finely chopped lemongrass
    1c Jasmine rice, uncooked
    2T copped cilantro
    2 bunches scallions, chopped (approx 1/2c)

    Recipe



    Heat large non-stick skillet on high about 2 mins. Add garlic, ginger, & broth. Bring to boil. Reduce heat to meduim. Add slaw, pepper flakes, chicken, lemongrass, rice, & cilantro. Simmer 10 mins. Garnish with scallions.

    * asian slaw is a combination of shredded napa cabbage, slivered celery & carrots.
