List of Ingredients
7 cups low sodium chicken broth
3 cups water
1 cup barley
2 cups chopped onion
2 cups chopped celery
4 cloves garlic, crushed
4 medium carrots, grated
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 cup red wine
1/2 cup chopped fresh parsley
2 medium tomatoes, chopped
1/4 cup low salt tomato paste Recipe
Combine broth, water, barley, onioin, celery, garlic and carrotsin a large saucepan. Bring to a boil. Add oregano, black pepper and wine. Return to a boil, reduce heat, and simmer for 1 hour. Stir in the parsley, tomatoes and tomato paste, and simmer for anouther 1/2 hour before serving.
