    Better Than French Onion Soup

    2 large onions, sliced
    3 tablespoons unflavored brewed coffee
    1 beef bouillon cubes (or use low sod. herb ox bouillon mix)
    4 cups water
    1/4 cup port wine (optional)

    Recipe



    Coat a large nonstick saucepan with nonstick spray. warm the saucepan over medium-high heat. Add the onions and coffee. Cook, stirring constantly, to coat the onions well with the coffee. Cook for 3 minutes, or until the coffee is nearly evaporated.
    Add the bouillon cube and 1/2 cup of water. As the cube melts mash it with the back of a large spoon and stir into the water. Cook, stirring, untilt he water is nearly evaporated. Add 1/4 cup of the remaining water and cook, stirring occasionally, for 7 minutes, or until the water evaporates. Add 1/4 cup of the remaining water and cook for another 7 minutes or until the onions are soft.
    Add the wine (if using) and the remaining 3 cups of water. Cook over medium high heat until the soup comes to a light boil.
