Carrot-Cauliflower Soup with Dill

2 1/2 cups low salt chicken broth
1 medium onion, chopped
6 medium carrots, peeled and cut in 1/2" slices
1 1/2 cups chopped white potatoes
2 cups water
2 cups chopped cauliflower
1/2 teaspoon dried dill
1/4 teaspoon black pepper Recipe
Heat 1/4 cup of broth in large saucepan. Add onion and saute until onion just begins to soften, about 3 minutes. Add carrots, potatoes, remaining broth, and water. Bring to a boil, reduce heat, cover and simmer for 5 minutes. Add cauliflower and continue to simmer until vegetables are just tender, about 12 minutes. Add dill and stir well. Sprinkle with black pepper and serve.
