Chili Fish Soup

1 c. shiitake mushrooms, sliced
1 med. onion, coarsely chopped
1 can NSA diced tomatoes
3 t. NSA chili powder
3 T. pineapple juice
5 c. NSA fish or vegetable stock
2 T. fresh cilantro, plus extra to garnish
1 lb. cod fillet, skinned and cubedRecipe
In a wok or large skillet, add onion and mushrooms to 1/4 c. of the stock and simmer about 5 min. or until vegetables are softened.
Add the chili powder, pineapple juice and rest of the stock and bring to a boil.
Add the cilantro and cod and simmer for 5 minutes or until the fish is cooked through.
Transfer the soup to warm bowls, garnish with extra cilantro and serve hot.
Cook's Tip: Cod is used in this recipe as it is a meaty white fish. Other fish may be substituted.
This is a nice change from the "ordinary" chili flavor and a unique way to serve fish. It is also excellent served over rice or potato.
