2 tablespoons low salt chicken broth
1 medium onion, diced
1 cup sliced celery
2 cloves garlic, minced
6 cups water
2 cups peeled and diced beets
2 cups peeled and diced turnips
2 tablespoons minced parsley
1/2 teaspoon ground black pepper
1 large apple, peeled, cored, diced Recipe
Heat broth in a large saucepan. Add onion, celery and garlic, and saute for 5 minutes. Add water, beets, turnips, parslye and black pepper. Bring to a boil, reduce heat, and simmer for 45 minutes. Stir in the apple and continue to simmer for an additional 10 minutes. Transfer soup to a blende ror food processor and blend until smooth. Chill for 2 hours before serving.
