    Garden of Eden Soup

    adapted from eating light magazine

    List of Ingredients




    1 1/4c boiling water
    NSA veggie bouillon (or you can use veggie broth & use it in place of water…this is easier to find with NSA)
    4 C tomato juice NSA (I might cut this in ½ & add a few diced fresh tomatoes)
    2 garlic cloves, crushed
    4 green onions, finely chopped
    1-2 potatoes, scrubbed & diced
    1 lg carrots, diced
    1c. broccoli florets (cut rather small)
    heaping cup of finely shredded cabbage
    1/3c of fresh snapped beans
    1/3 c. frozen fava beans (or fresh if you can get them)
    pepper & other spices to taste (seems like a good recipe for Mrs Dash)
    8 sprigs of fresh basil (some for chopping, some for garnish)

    Recipe



    Pour water (or broth into pan, add bouillon (if using water). Add tomato juice, garlic, potato, and carrot. Reduce to simmer & cook for 10 min. add broccoli, cabbage, & beans. Bring back to a boil, then reduce to a simmer & cook 5 min until veggies are tender-crisp. Garnish with some cut fresh basil as well as a basil sprig.
