Gazpacho with Shrimp

List of Ingredients
1/2 large cucumber, peeled, cut in half crosswise
1 large very ripe tomato, cut into quarters
1/2 green bell pepper, cut into quarters
1/2 red bell pepper, cut into quarters
1/2 large yellow onion, cut into quarters
3 tablespoons chopped fresh cilantro
2 sprigs fresh parsley
1 small clove garlic, minced
2 tablespoons cider vinegar
5 tablespoons fresh squeezed lemon or lime juice
hot pepper sauce
2 cups tomato juice
1 cup cold water
3 cooked medium shrimp, chilled cut in half lengthwise

In a food processor, combine half of the cucumber, half of the tomatoes, half of the green peppers, ahlf of the red peppers, and half of the onions. Add the chopped cilantro, parsley, garlic, vinegar, and 4 tbl. of the lemon juice or lime juice. Process until nearly pureed. Season to taste with hot pepper sauce.
Add the remaining cucumber, tomatoes, green peppers, red peppers, and onions. Pulse 2-3 times, so that the mixture remains chunky. Stir int he tomato juice and water. Serve soup garnished with shrimp and cilantro sprigs
