2 cups water
3 potatoes, diced
2 cups green beans, cut into 1" lengths
3 tablespoons low salt chicken broth
2 medium onion, chopped
2 cloves minced garlic
1 jalepeno pepper, seeded, minced
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
2 cups low salt canned tomatoes, drained
1 teaspoon lemon juice Recipe
Bring water and potatoes to a boil in a saucepan and cook until potatoes are just tender, abut 12 minutes. Add beans and continue to cook for 3 additional minutes. Heat broth in a large skillet. Add onion, garlic and jalapeno and saute for 3 minutes. Add turmeric and cumin and cumin, and saute for 1 additional minute. Add potatoes and beans, tomatoes, and lemon juice and simmer, stirring several times, for 6 minutes.
