Harvest Stew (vegetarian)

List of Ingredients
1/4 cup water, low salt chicken or veg. stock or wine
4 onions, chopped
4 cloves garlic, minced
4 leeks, cut in 3/4 inch pieces, rinsed well
4 potatoes, cut into 1" pieces
4 carrots, cut into 1" pieces
1/2 turnip, cut into 1" cubes
1 sweet potato, cut into 1" cubes
5 cups water or low salt chicken broth
2 teaspoons dried oregano leaves
2 teaspoons dried thyme leavaes
1 cup broccoli flroets
1 cup green beans, cut into 1" pieces
1/4 teaspoon pepper
1/2 cup chopped fresh parsley Recipe
Heat water, broth or wine in large heavy soup pot over medium heat. Add onions and garlic. Cook and stir until tender. Add more liquid during this process if needed. Add leeks, potatoes, carrots, turnip, sweet potato, 5 cups of water or broth, oregano and thyme. Cover and simmer for 30 minutes or until vegetables are tender. Add broccoli, green beans and pepper. Cook for 10 minutes, or until broccoli and green beans are tender, adding more water if needed.
