List of Ingredients
1 cup chopped onions (1 medium onion)
1 cup chopped celery
1 medium Green pepper, chopped
3-4 cloves garlic, minced
1/2 lb. boneless, skinless chicken breast, cut into thin strips
2 -1/2 cups Low salt or No salt chicken broth
1/2 teaspoon thyme
1 tablespoon basil
1 teaspoon-1 tablespoon Mrs. Dash Hot & Spicy
1(14.5-oz) can no Salt Added diced tomatoes, undrained
1 cup uncooked instant rice
8-oz frozen shelled deveined cooked shrimp, thawed (Remove tails)Recipe
Heat Dutch oven over medium high heat until hot. Add onions, celery, green pepper and garlic: cook and stir 5 minutes. (You may use a little chicken broth to sauté with.)
Add chicken; cook 2-3 minutes or until no longer pink.
Add broth, thyme, basil, Mrs. Dash Hot & Spicy, and tomatoes; mix well. Bring to a boil. Stir in rice and shrimp. Remove from heat; cover and let stand 5 minutes. Serving size: 1-1/2 cups Makes 5 servings
Also, you may substitute regular rice for instant rice. Just remember to increase cooking time to allow rice to fully cook. (Usually 15-30 minutes. Check your rice package to verify time)
