    3 cup peeled and diced Hubbard Squash
    4 medium carrots, sliced
    1 medium onion, chopped
    6 cups low-sodium chicken broth
    2 tablespoons brown sugar (or brown sugar twin)
    2 tablespoons fesh grated gingerroot
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground mace
    1/4 cup lemon juice

    Recipe



    Place squash, onion, broth, brown sugar, gingerroot, cinnamon and mace in a large pot. Bring to a boil, reuce heat andsimmer until squash is tender, about 30 minutes. Remove rom heat and stir in lemon juice. Transfer soup to a blender or food processor and puree. Return puree to the pot, heat through and serve.
