Jalapeno-Butternut Soup

1/4 cup low salt chicken broth
1 large onion, diced
1 cup sliced celery
3 cloves garlic, minced
1 tablespoon fresh grated gingerroot
1 jalapeno pepper, seeded and minced
2 tomatoes, chopped
1 tablespoon curry powder
2 teaspoons ground cumin
1/2 teaspoon ground black pepper
4 cups peeled and diced butternut squash
5 cups water Recipe
Heat broth in a large saucepan. Add onion, celery, garlic, gingerroot and jalapeno pepper, and saute for 5 minutes. Add tomaotes, curry powder, cumin and black pepper, and saute for additional 3 minutes. Add squash and water. Bring to a boil, reduce heat, and simmer, stirring several times, for 30 minutes. Remove from heat and allow to cool for 15 minutes. Place in a food processor or blender and process until smooth. Return soup to heat and bring to a gentle simmer before serving.
