    Lemon Chicken Soup

    List of Ingredients




    1/4 cup low salt chicken broth
    1 cup chopped onions
    4 cloves garlic, minced
    2 large carrots, diced
    1 rib celery, diced
    8 cups low salt chicken broth
    1 cup diced tomatoes
    2 cups chopped fresh spinach
    1/2 teaspoon dried thyem
    1 teaspoon honey
    1/4 teaspoon fresh ground pepper
    1 pound skinless boneless chicken breast cut in tiny pieces
    1/4 cup chopped fresh parsley
    2 tablespoons lemon juice

    Recipe



    Spray a large pot with nonstick cooking spray. Heat 1/4 cup broth in the pot: add the onions, garlic, carrots and celery, and cook for about 10 minutes, until the onions turn golden and are lightly browned around the edges. Keep the pot covered between stirrings. Add remaining ingredients except the parsley and lemon juice. Bring to a simmer, cover, and cook for 10 minutes. Stir in the parsley and lemon juice. Cook for 5 minutes longer.
