List of Ingredients
6 1/4 cups low salt chicken broth
2 medium onions, chopped
2 stalks celery, chopped
1 medium green bell pepper, cored and chopped
2 cups water
1/2 teaspoon turmeric
1/2 teaspoon ground coriander
2 medium carrots, diced
2 cups peeled chopped potatoes
2 medium tomatoes, chopped
3 tablespoons lemon juice
1 teaspoon dried cilantro
1/2 teaspoon ground black pepper Recipe
Heat 1/4 cup broth in a large saucepan. Add onions, celery and green bell pepper,and saute until pepper begins to soften, about 5 minutes. Add remaining broth,w ater, turmeric, coriander, carrots and potatoes. Bring to a boil, reduce heat, and simmer until potatoes are just tender, about 20 minutes. Stir in tomatoes, lemon juice, cilantro and black pepper, and contineu to simmer until all ingredients are heated through, about an additional 5 minutes.
