Mushroom-Spinach Soup

6 cups sliced mushrooms
4 carrots, cut in 1/4" thick medallions
1 medium onion, chopped
3 cups sliced celery
1/2 cup barley
1/8 teaspoon cayenne
8 cups low salt chicken broth
2 cups water
4 cups chopped spinach
1/2 teaspoon ground pepper Recipe
Combine mushrooms, carrots, onion, celery, barley, cayenne, broth and water in a large saucepan. Bring to a boil, reduce heat, and simmer for 35 minutes. Add spinach and continue to cook for 10 minutes. Sprinkle with black pepper and serve.
