Okra-Spinach-Pinto Bean Gumbo

1/4 cup low salt chicken broth
1 medium onion, diced
1 medium green bell pepper, cored, diced
1 dcup diced celery
4 cloves garlic, minced
6 cups water
1 cup cooked pinto beans
2 cups low salt canned crushed tomatoes with juice
2 medium carrots, thin sliced
1/4 cup minced fresh parsley
1 tablespoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1 cup chopped fresh or thawed frozen okra
3 cups chopped fresh spinach
4 cups cooked white rice
3 scallions, minced Recipe
Heat broth in a large soup pot. Add onion, green bell pepper, celery and garlic. Saute until pepper begins to soften, about 6 minutes. Add water, beans, tomatoe with juice, carrots, parsley, oregano, thyme, black pepper and cayenne. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
Add okra and spinach. Return to a boil and reduce heat, and simmer for an additional 15 minutes. Stir rice into soup and heat through. Top with minced scallions.
