    From member Erika29: This is an easy, versatile soup that can be eaten mild or spicy. Eat it light or add rice for a heartier meal.

    List of Ingredients




    * 1 medium eggplant
    * 1 medium onion, chopped
    * 1 red bell pepper, chopped
    * 1 clove garlic, minced
    * crushed red pepper to taste
    * 3-4 cups very low sodium chicken or vegetable broth

    Recipe



    Slice eggplant in half lengthwise. Place both halves face down on a non-stick cookie sheet (or use the reynolds no-stick foil). Bake at 400° until soft (about 30 minutes.)

    While the eggplant cooks...Cook onion, garlic, red pepper, and crushed red pepper in a pot on the stove until vegetables are soft. Add broth. Simmer until eggplant is done.

    When eggplant is cool, scoop out the insides into the pot. Heat through. Blend soup in a blender (Or use a hand-held mixer). Serve topped with fresh cilantro.
