Steam squash whole until knife cuts through easily. Let cool and scoop out insides and place in bowl or blender. Blend/puree with no/low sodium chicken broth (as desired for thickness). Season with ground ginger to taste. Put in pot and heat on stove. Add fresh cilantro or parsley for garnish.
