    Carrot Soup

    List of Ingredients

    1 medium onion, chopped
    3 garlic cloves, minced
    2 tablespoons margarine - or use cooking spray or broth for this step
    1 teaspoon thyme
    12 carrots, sliced
    2 potatoes, peeled and sliced
    (original recipe called for 1 teaspoon salt)
    1 bay leaf
    pepper to taste
    2 cans chicken broth, strained

    Recipe

    In a soup pot or large casserole, saute onion and garlic in margarine until soft (or use cooking spray). Stir in thyme. Mix in carrots, potatoes, (salt), bay leaf, and pepper. Add chicken broth and enough water to cover vegetables. Bring soup to a boil. Reduce heat, cover and simmer for 30 minutes. Remove bay leaf and puree soup in blender.
