    Cauliflower Soup

    List of Ingredients

    6 cups water
    4 cups chopped caluliflower
    2 cups sliced carrots
    1/2 cup chopped onions
    2 tablespoons chopped parsley
    4 chicken bouillon cubes
    white pepper to taste

    Recipe

    In a 5 quart saucepan, add all ingredients except pepper. Cover and simmer until veggies are tender (about 20 minutes). Strain off and reserve most of the liquid. Place veggies in a food processor and puree. Add pureed veggies and reserved liquid back to the pot; add pepper and reheat. (alternately you could use a hand blender and just puree right in the pot).

    Makes 6 servings, each providing 1 cup vege A
