    From member speedyzlover: By the way, this is great for those like me who really can't manage to drink the water recommended! It tastes great and you can add more or less garlic and pepper to taste!

    List of Ingredients

    * 2 split chicken breasts, diced
    * 2-3 cups water
    * 1/4 onion, diced
    * generous sprinkle Italian seasonings
    * 1 clove garlic, sliced
    * 1 cup rice
    * 2-3 cups water
    * 1 bay leaf
    * generous sprinkle cracked red and black pepper
    * 1 clove garlic, sliced

    Recipe

    Combine first five ingredients, boil until chicken is cooked. Transfer to bowl. In same pot, boil rice in water with remaining ingredients until rice is tender. Add chicken, stir.

    When I was done cooking the chicken, I strained it out and measured it - 12 ounces, so I figured that was 4-6 servings since I get 2-3 oz of Protein a meal. So when I added the rice, I added 2 cups, now each serving will have about 2.5 ounces of chicken and 1/2 cup of Carb. The onions are negligible so I will add some salad for meals with vegies and add nothing for meal without veggies.
