    Garden Vegetable Soup

    List of Ingredients

    3/4 cup sliced carrots
    1/2 cup diced onion
    2 cloves minced garlic
    3 cups fat free low sodium broth
    1 1/2 cups diced green bcabbage
    1/2 cup fresh green beans, trimmed cut in 1" pieces
    1 tablespoon low sodium tomato paste
    1/2 teaspoon dried basil
    1/4 teaspoon dried oregano
    1/2 cup diced zucchini

    Recipe

    In large saucepan sprayed with cooking spray, saute carrot, onion and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, green beans, tomato paste, basil and oregano; bring to a boil. Lower heat and simmer, covered, about 15 minutes or until green beans are tender. Stir in zucchini and heat 3-4 minutes. Serve Hot
