I buy skinless chicken breasts with rib meat. It took me 20 minutes to remove the rib bones from 12 breasts. Then I put it all the bones (with whatever meat was still attached) in a big pot, barely covered with water, added some celery and carrots and onion and peppercorns. Let it simmer for 1-2 hours then pour into a bowl through a colander. Let the bones cool and pick the remaining meat off if you want. That took me about 15 minutes and I was rewarded with 13 oz of meat! I let the broth cool in the fridge and skimmed the fat off and now I have plenty of sodium-free broth. Next time I'm going to roast the bones before I simmer them to get an even richer flavor!
