Mock Italian Wedding Soup

First Make your own chicken broth; Use dark meat chicken(thighs/legs) and boil for about 20 minute I do mine a little longer to get as much as the flavor I can. Add what ever spice you want to flavor it(No Salt) Strain the chicken(freeze the chicken do not use it for this recipe) now you have the perfect chicken stock no worry about the sodium as you did not add any
Now for the Main Recipe yeilds about 6-8 servings
1 large dutch oven/stock pot/2qt-5qt
Pour you stock into the large pan if the current pan is big enough just use it that makes an easier cleanup
1 10-12oz frozen spinach
16 oz of meat see options below *I use turkey sausage*(another recipe)
2 cups Rice or Barley or one of each
1 cup fresh mushroom(optional)
green pepper[optional finely chopped]
1 tsp oregano
1tsp cumin
1 bay leaf
1/2 tsp onion powder
1/2 Thyme
1tsp Sage
1/2 tsp basil
1 Black or Pepper
What ever other you want to taste.
Simmer this on medium/low for about 30 minutes The perfect soup with small salad of greens
Meat options: boneless cubed skinless chicken breast,gound beef(lean),gound turkey sausage,
no meat add veggies like green/red/yellow peppers diced,mushrooms,broccoli,limited amounts of carrots,celery, even tomatoes makes a great fall and winter soup. Spring and summer too.
