Potato-Chicken-Kale Soup

List of Ingredients
1 lb chicken, diced
4 cups potato, diced
(This next is preference as to amounts, I'm listing what I did)
4 cups Low-sodium chicken broth, 3 Herb-OX low sodium chicken, 4 cups H2O (you could use more or less, just equal about 7-8 cups liquid)
4-6 cups chopped kale (it's like a leafy cabbage)
Onion (I like, so I used 2) chopped
Garlic (I like, so I used 3 cloves) minced
2 bay leaves
Basil (I don't know how much, just till it looks right)
Recipe
Sautee onion and garlic in just enough liquid to keep moist. Add chicken and begin cooking. When chicken is about 1/2 way done, add the rest of the liquid and boil potatoes. Add the bay leaves. When potatoes are tender, add kale and basil and cook for about 10 min or till tender. When you think it's done, mash the potatoes a little and portion. Viola! I also added fresh cracked pepper.
