Pumpkin Ginger Soup

1 med. sugar pumpkin (pie pumpkin - about 3 pounds)
2-3 leeks - thinly sliced
1 heaping T fresh minced ginger
6 C low sodium chicken broth
1/2 t white pepper
Cilantro leaves - optional
Recipe
Cut pumpkin into approx. 3 inch pieces and steam until fork tender - about 15-20 minutes. Scoop out pumpkin and set aside. In large stock pot saute leeks until translucent - about 3-4 minutes (you may need to add a little of the stock to keep them from sticking) Then add pumpkin, ginger, broth and pepper. Simmer for about 30 minutes until pumpkin is very soft. Whirl in food processor or blend w/ wand. 1 C soup = 1/2 C carb A.
