Pumpkin Soup

List of Ingredients
3 tablespoons chopped onion
2 tablespoons oat meal flour
6 cups chicken broth
one 15-ounce can unsweetened pumpkin puree
one 8-ounce jar applesauce
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup rice milk
freshly ground pepper, to taste
Recipe
Heat a small amount of chicken broth in a large saucepan and saute the onions over medium heat for 3 to 4 minutes until softened. Sprinkle the flour over the onions and stir until mixed. Add the chicken broth and pumpkin and stir until smooth.
Add the remaining ingredients except the rice milk, pepper. Stir well, cover and simmer gently for about 20 minutes until hot and the flavors have blended.
Stir in the rice milk and heat until hot. Garnish with freshly ground pepper and serve immediately.
