6 cups chicken broth
3 large cucumbers, peeled, quartered and seeded
1/3 pound fresh mushrooms
5 green onions
Fresh parsley
Recipe
1. Bring chicken broth to a boil in a large saucepan.
2. Cut cucumbers into thin slices (about 1/4 to 1/8 inches thick. Clean mushrooms and cut into thin slices (about the same thickness as the cucumbers). Cut green onions into small slices.
3. Cook cucumbers and mushrooms in broth for about 7 to 10 minutes or until just tender. Add green onions to soup right before serving.
4. Add pepper to taste. Pour into individual soup bowls and garnish with parsley.
