List of Ingredients
5 red potatoes, peeled and cubed
2 1/2 c. reduced-sodium, low fat chicken broth
4 green onions
1 chopped red pepper
1 c. water
1/4 c. oat flour
20 size 51/60 shrimp (uncooked, peeded and deveined)
2 T. minced fresh parsley
1/2 t. paprika
1/2 t. low sodium worcestershire sauce
1/8 t. cayenne pepper
1/8 t. pepper
Recipe
In large saucepan, bring potatoes, broth, onions and red pepper to a boil. REduce heat; cover and simmer for 15 minutes or until vegetables are tender. Stir in water. Gently mash vegetables with a potato masher, leaving some chunks of potatoes.
Combine oat flour with a little water until smooth; gradually stir in to potatoe mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the remaining ingredients. REturn to a boil. Cook and stir for 2-3 minutes or until shrimp turn pink (makes 5 servings)
