From member Brownie2: If you like the stuffed green peppers from the menu cards, then you will LOVE this soup! Stuffed Peppers in a soup bowl! The soup is great reheated the next day, therefore perfect for make-ahead and eat all week!
List of Ingredients
* 1 cup chopped onion
* 1 clove garlic, minced
* 1 bay leaf
* 1-1/2 cups chopped bell pepper
* 1/2 lb ground turkey breast
* 16 oz canned crushed tomatoes
* 1/2 cup tomato paste
* 1 cup water
* 1 cup low sodium chicken broth
* 2 tbsp chopped fresh parsley (or 1 tbsp dried)
* 2 tsp sugar substitute (brown or regular)
* 1 tsp ground black pepper
* 1/4 tsp ground cinnamon
* chili powder, optional
* red pepper flakes, optional
* 1/2 cup cooked rice
Recipe
Saute onion, garlic and green pepper in lightly sprayed pan** (or use water) just until tender. Do not brown. Stir turkey into vegetables; cook until turkey is browned/cooked through, about 10 minutes.
Add tomatoes, paste, water, chicken broth, parsley, sugar substitute, bay leaf and pepper to the browned turkey mixture. Cover and simmer until well cooked (so flavors marry). Towards end of cooking, add in optional items and cinnamon. Taste for seasoning. Remove and discard bay leaf from soup. Serve over rice.
