    adapted from The Super Foods Cookbook

    List of Ingredients




    8 sweet red bell peppers, chopped
    1/2 cup minced celery
    2 cloves garlic, minced
    2 shallots, minced
    1 tablespoon peeled minced gingerroot
    2 tablespoons chicken broth (or use cooking spray)
    4 cups chicken stock, low salt
    1 tablespoon lme juice
    1/4 teaspoon ground coriander
    1/8 teaspoon ground ginger

    Recipe



    In a 3 quart saucepan, saute the peppers, celery, garlic, shallots and minced ginger in the 2 tbl. of stock or cooking spray (may need to add more broth as you go) for 5 minutes. Add the 4 cups stock, lime juice, coriander and ground ginger. Simer for 25-30 minutes, or until the peppers are tender. Let cool for about 5 minutes. In a blender, puree the soup int batches until smooth.
