6 cups low salt chicken broth
1 medium onion, chopped
4 cloves garlic, crushed
2 stalks celery, sliced
2 medium green bell peppers, cored, coarse chop
3 medium tomatoes, chopped, with juice
1/2 cup uncooked brown rice
1 tablespoon paprika
1/8 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
1/2 cup finely chopped fresh parsley Recipe
Place broth in a large saucepan. Add onion, garlic, celery, green bell peppers, tomatoes, rice, paprika and cayenne pepper. Bring to a boil, reduce heat, andsimmer until rice is just tender, about 45 minutes. Transfer to bowls, sprinkle with pepper and garnish with parsley.
