    List of Ingredients




    4 quarts water
    8 ounces butternut squash, peeled, seeded cut into 2" chunks
    3 stalks celery, coarse chopped
    2 large tomatoes, diced
    2 large onions, chopped
    1/2 ccup chopped fresh parsley
    3 shallots, coarse chopped
    4 cloves garlic, minced
    1 tablespoon dried basil
    1 large bay leaf
    1/4 teaspoon dried thyme
    1/4 teaspoon dried rosemary

    Recipe



    In a large nonstick pot, combin the water, squash, celery, tomatoes, onions, carrots, parsley, shallots and garlic. Place the basil, bay leaf, thyme and rosemary ini a mesh tea ball or warp in a small piece of cheesecloth and tie with kitchen string. Add to the pot. Bring to a boil over medium-high heat. Reeduce the heat to medium-low, cover and simmer for 1 hour. Strain the stock through a colander into a large bowl. Discard the vgetables and herbs. Refrigerate or freeze for use in recipes.
