    List of Ingredients




    2 cups low salt vegetable broth
    1 zucchini, sliced
    2 carrots, sliced
    1 stalk celery, sliced
    1/2 tablespoon fresh parsley for garnish

    Recipe



    Combine all ingredients in a medium sized pot. Brnig to a boil. Reduce heat, cover and simmer for 20 minutes or unitl vegetables are tender. Puree soup in a blender. Garnish with parsley. Can omit puree step for chunkier texture.
