    4 fresh mushrooms sliced
    1/2 onion diced
    1 can low-sodium tomato paste
    1 cup reconstituted TVP
    1/2 cup fat free chicken broth or water
    1 egg white
    Basil
    Oregano
    Garlic Powder
    Black Pepper

    Recipe



    Put 1/4 cup chicken broth or water in pan to sautee mushrooms and onions. Cook until tender. Add TVP and brown slightly. Add spices to your liking. Mix in tomato paste and remaining broth or water. Cook down slightly until almost thick. You may have to adjust the liquid until it reaches the right consistency. Too wet and it won't hold shape as a loaf.

    Remove from heat. Let cool or refrigerate. You can make this ahead of time and use part of it as spaghetti sauce. Once cool, add an egg white and shape into a loaf. Bake at 350 for about 25-30 minutes.

    If you try it and it seems too bitter, try adding a dash of Splenda to sweeten it up a little. I have problems with the tomato paste being bitter sometimes.
