Vegetable Paella

1/4 cup water, low salt chicken or veg broth, or wine
1 dry red chile pepper, crushed
1 large onoin, thinly sliced
2 large green or red bell peppers seeded and thin sliced
2 cloves garlic, minced
1 1/2 teaspoons paprika
1/2 teaspoon dried thyme leaves
1 medium yellow summer squash, diced
4 cups chopped fresh or low salt canned tomatoes drained
1/4 teaspoon black pepper
1 cup long-grain uncooked white rice
2 cups water or nonfat chicken broth Recipe
Heat water, broth, or wine in a large heavy pot over medium heat. Add chile pepper, onion, and bell peppers. Cook and stir for 10 minutes, or until veggies are tender and lightly browned. Add more liquid during this process if needed. Add garlic, paprika, thyme, yellow summer squash, tomatoes and pepper. Cover the pot and simmer for 15 minutes. Add rice and 2 cups of water or chicken broth. Bring to a boil. reduce heat, cover and simmer for 30 minutes.
