Artichokes w/ Carrots & Potatoes

List of Ingredients
2 1/4 cups low salt chicken broth
2 medium onions, chopped
1 medium clove garlic, minced
2 cups water
1 medium carrot, scraped and chopped
6 cups chopped potatoes
3 cups fresh cooked artichoke hearts (can use frozen)
1 teaspoon dried tarragon
1 teaspoon dried thyme
1/4 teaspoon ground black pepper Recipe
Heat 1/4 cup broth in a largesaucepan. Add onions, and saute for 4 minutes. Add garlic and continue to saute for 1 minute. Add the remaining broth, water and remaining ingredients. Bring to a boil. Reduc3e heat, cover and simmer until potatoes are tender, about 20 minutes. Transfer to individual bowls and serve.
