1 eggplant (1 1/2-2 lbs)
2 tablespoons freshly squeezed lemon juice
2 tablespoons balsamic vinegar
3 cloves garlic, minced
2 teaspoons grated fresh ginger
1/2 cup finely chopped onions
1/3 cup shredded carrots
ground black pepper
2 tablespoons capers, rinsed and drained Recipe
Pierce the eggplant in several spots with a sharp knife. Microwave on high power for a total of 9 minutes, or until soft; turn the eggplant after 4 minutes. Set aside until cool enough to handle.
Cut the eggplant in half, scoop out the pulp, and transfer the pulp to a food processor. Discard the eggplant skin. Add the lemon juice, vinegar, garlic and ginger; process until almost smooth but not pureed. Add the onions and carrots; pulse one or twice to combine. Season to taste with the pepper. Chill for several hours. Sprinkle with the capers just before serving.
